Hemp Hummus Falafel - Serves 2 to 4


It’s always the right time for falafel, isn’t it? And if you are looking for a tasty and super easy falafel recipe, we’ve got you sorted! We prepared this yummy version of falafel for our friends at As Nature Intended, made with our delicious hemp hummus. We love the Middle Eastern flavours of their Spiced Carrot & Turmeric hummus, so you’ll find this as the falafel mix base, but of course any of their hemp hummus will make a great falafel, packed full of plant-based protein and bursting with flavour! Here below what you will need:

1 x 190g Themptation Hemp hummus (we are using Spiced Carrot & Turmeric but you can use your favourite one)

120g chick peas (half a can)

50g wholemeal/spelt flour (gluten free also works)

20g parsley rough chopped

1 quarter lemon zest

Salt & pepper to season

Optional – 1/5 TSP bicarb, lemon juice or wedge for garnish

Dressing (optional) 1 x 150g Basil hemp pesto, 50ml extra virgin oil.

Method:

  1. Start by mixing the hemp hummus with the other ingredients inc rough chopped parsley in a large mixing bowl – the whole chickpeas will add a little texture and bite but you can squash them a little. Once mixed, place the bowl in the fridge for 20 mins to chill – this will make it easier to shape the falafel balls. You can add quarter of a tea spoon of bicarb to the mix, this will help keep them juicy inside, but it’s not necessary.

  2. In the mean time pre heat your oven to 190c or 180c if a fan oven. Next lay a sheet of grease proof paper in a baking tray and drizzle olive oil over it– this will help the falafel crisp up and colour.

  3. Once the oven is up to temp, take out your falafel mix, dust hands with flour and take a small handful of mix. Roll between your hands until a firm ball is made, then place onto the baking tray. Repeat until all the mix is used – depending on size, you should expect approx 8-10 falafel.

  4. Place the baking tray into the fridge or freezer for 5 mins – this will help the falafel retain their shape, then straight into the oven for 25-30 mins, turn the falafel over half way through.

For the Hemp pesto dressing – simply spoon a few dollops of Themptation fresh basil Hemp Pesto in a glass, add a few glugs of extra virgin oil, and stir vigorously until combined – you can drizzle this over the falafel or put in a dish for dipping.
