Healthy Hemp Granola, Yoghurt & Stewed Fruit Pot
So this recipe is so so easy and once made, you will have enough for weeks of yummy breakfasts. It also looks great so its a sure fire way to impress a friend or loved one this valentines day! #valentinesday or #anti-valentinesday depending on your status ;-)
We will first start with the granola:
500g of Themptation Hemp porridge
2 table spoons of maple syrup
2 table spoons of soft brown sugar
2 table spoons of vegetable oil
A pinch of salt
So begin by turning your oven on to 150C, then mix the maple syrup, sugar, veg oil and salt together in a bowl and then slowly combine the hemp porridge mix until all the oats and seeds are coated.
Lay the mixture flat on a large baking tray lined with parchment and bake for 30 mins or until golden brown, you should respread/mix half way through to get an even colouring. Let the granola cool down!
Now for stewed fruits
1 punnet raspberries
1 punnet strawberries
So get a small pan on the hob on a medium heat, add all the rasberries whole and then chop the strawberries and rhubarb to around 2cm length. Add 100ml of water and just let the whole lot simmer down until you are left with a soft fruit compote. If the fruit is still stiff you can add a little more water and simmer down.
Let the stewed fruit cool and then transfer to a bowl or tuperware and store in the fridge for up to 2 weeks using when you need.
We used natural yoghurt as the middle layer but you could mix it up with lots of layers. Like an extra layer of raw shelled hemp seeds would add a delicious nutty flavour.
