All about the hemp, lentil & carrot soup. #spicey.

This is possibly my favourite soup ever! So tasty and incredibly easy to make - This is going to be one of the shortest recipes we ever do!

Ive recently decided to try being vegan and lack of protein is a big worry - the shelled hemp seeds and lentils are packed full of low carb high fibre protein and keep you full for ages too so no temptation to snack after! Ive decided to not use any stock cubes as with all the ingredients and spices its tasty as it is.

Ingredients (easily serves 4) :

2 Large carrots,

3 large onions,

250g red split lentils (dried)

150g shelled hemp seeds

2 tomatoes

5 cloves of garlic

1 tablespoon of paprika

1 tablespoon of freshly ground pepper

1 tablespoon of salt

1 table spoon of cayenne chilli powder

A sprinkle of dried chilli flakes (or a small fresh chilli)

Start by chopping the carrots, onions, tomatoes and garlic and add to a deep pan with a little olive oil. Fry on a gentle heat until the onions are softened and then add the lentils and stir thoroughly. Now add 2L of boiling water and all the spices.

Hard part done! Simply allow the soup to simmer for 20 mins and then pour in the shelled hemp seeds. Take the soup off the heat and using a stick blender whizz the whole lot up.

Depending on how thick you want the soup you can either put back onto the heat to thicken or even add more boiling water to make it thinner.

You are officially done! Now plate it up in bowls, toast some bread for dipping and add a few sprigs of fresh basil or parsley. Time to eat... Nom Nom Nom.
