We loooveee Cucumber!
It's often underated as being basically only water however it contains many vital vitamins and minerals aswell as being really hydrating!
As spring has OFFICIALLY sprung, we thought you might like some lighter lunch options... this salad is also a great option to tupperware to work.
What you need:
2 Whole Cucumbers
50g Themptation hemp seeds
a medium sized piece of ginger root
1 tsp of salt
2 large Garlic cloves
thinly sliced small red onion
3 tbsp white wine vinegar
2 tsp unrefined soft brown cane sugar
2 tbsp Themptation Hemp Oil
2 tsp toasted sesame oil
1. First of all, prepare the salad. Grate cucumber longways into strips. Place into a dish with finely chopped garlic, ginger and red onion.
2. Mix up the dressing, whisk together with a fork the white wine vinegar, hemp oil, sesame oil and sugar.
3. Pour the dressing over the salad base, toss with the hemp seeds and salt.
Can keep in the fridge for up to 3 days.
